what you need:
3 cups of reduced fat cheese-its
what to do:
Slice Zucchini thinly about 1/8 inch. Lay one paper towel on table & spread out zucchini slices making sure none are on top of each other. Place paper towel on top of zucchini so they are in the middle of a paper towel sandwich. You will probably need to do this twice if you have a lot of zucchini slices. Let sit for about 30 minutes & allow paper towels to absorb the moisture from the zucchini (This will make your chips more crunchy).
Preheat oven to 425F
Crack egg into bowl & beat. Add 1 teaspoon of garlic powder and ½ teaspoon of onion powder to egg & mix.
Mash up cheese-its & release all of your stress to create a breadcrumb-like consistency.
After 30 minutes, dip zucchini slices individually in egg & then dip into the cheese-it crumbs. Make sure both sides are covered. Lay on a baking tray.
After all zucchini slices are covered & on the tray, bake for about 25 minutes. Allow to cool and enjoy!
Ok, who doesn't love cheese-its? Let's be real, sometimes there is nothing better than that crunchy, cheesy square cracker. Now you can use that delectable snack food to make a crust for baked zucchini chips. These are the perfect, easy snack you won't be able to resist while getting the benefits of the in-season zucchini.
I used the reduced fat cheese-its to keep the calorie count down in this snack. Zucchinis are naturally low in calories & have high levels of vitamin c. This super vegetable also contains two phytonutrients, lutein & zeaxanthin, which promote healthy eyesight. So while your snacking away you are also giving your body those much needed nutrients your body craves.
