what you need
this recipe makes about 15 tartlets.
about 1 container of cherry tomatoes
what to do
cut cherry tomatoes in half. put in a bowl with one clove of chopped garlic, about a half cup of white wine & about a tablespoon of basil. Let soak for 3 hours or if you are short on time prep the other ingredients while the tomatoes soak (no amount of time in wine is enough, but we can be flexible).
heat oven to 450.
coat muffin tins with a thin layer of olive oil. defrost puff pastry & shape puff pastry into muffin tins.
slice leeks thinly & put in a separate bowl with olive oil, 1 clove of sliced garlic & a table spoon of sliced basil.
sauté leek mixture until leeks are soft. about 4 minutes.
add about a tablespoon of leek mixture to pastries, add about 3 or 4 tomatoes to each pastry.
bake in oven for about 25 minutes or until pastry is golden brown. add a slice of goat cheese & serve. voila!
Because it is summer here in Cape Town, I decided to make a summer dish inspired by summer flavors like fresh tomatoes & basil this tomato & leek tartlet will blow your mind. Incredibly easy, but with a ton of flavor. Enjoy as an appetizer or a main course.
