Well, since I have been slacking on blogging the past few months, I am offering you the best salad around to make it up to you. This summer farro salad is full of bright flavors, super healthy & easy to put together. Farro is my new favorite grain that is full of fiber & protein so you can feel like the ultimate health pharaoh as you eat it. This salad doesn't mess around.
What you need to feed 3-4: 2 cups of cooked farro 1 cup cucumber cut into small slices 1 can of corn 2 small radishes 3 cups of mixed greens salad 1/2 cup crumbled feta 1 heirloom tomato lemon white wine vinegar handful of mint handful basil olive oil salt & pepper | What to do: Cook farro per instructions of the package (a lot like cooking rice). Thinly slice radishes, cut cucumbers & tomato into small bite size pieces. Drain & rinse corn. Mix vegetable, farro & chopped herbs together. Assemble farro mixture on top of mixed greens. Mix together 3 tablespoons of olive oil, 2 tablespoons of vinegar & squeeze about 1/3 of lemon & drizzle on top of salad. Top with feta & enjoy the beautiful vegetable colors as summer comes to an end... |
