What you need:
-Frozen pizza crust or if you want to make it from scratch find the recipe here. If you are in San Francisco you can get Vicolo's frozen pizza crust which is my personal favorite.
-1/2 lb of shrimp, washed, de-veined or frozen ones whatever is easiest
-cup of cherry tomatoes
-herbed goat cheese
-2 garlic cloves
-salt & pepper
What to do:
Preheat oven to 425F.
Cut leaks (use the pale green part). Cut into their pretty bullseye circles & then in half. Chop garlic.
Heat olive oil, cook garlic & leeks for about 5 minutes. Add shrimp. Salt & pepper. Cook for about 4-5 minutes until pink.
Top pizza with leaks & shrimp, halved tomatoes, goat cheese & basil. Cook for about 15 minutes. Cut avocado & add to pizza once removed. Slice & enjoy!
I love this pizza because it takes less than 30 minutes & after you feel like you ate a delicious pie without the grease of a normal pizza. Topped with fresh summer vegetables this is the perfect meal for lunch or dinner.
