My first dessert, a no bake cheesecake! An amazing treat for a late night snack with friends & perfect for entertaining. I love this cheesecake because you don't have to make a crust & it does not require baking. You can use an electric mixer or in the absence of one, mix & whip by hand (as I am known to do in my dorm). The sauce can also be cooked in a hot rice or slow cooker (not what they are made for, but you have to use what you have!)
what you need:
a packet of reduced fat cream cheese
1/4 cup of granulated white sugar
about 1 teaspoon vanilla extract
1 cup of heavy whipping cream
original graham crackers
1 cup of POM Wonderful 100% pomegranate juice
2/3 cup of granulated sugar
2 tablespoons of cornstarch
1/4 cup of rum (because why not?)
fresh pomegranate seeds to sprinkle on top
what to do:
combine room temperature cream cheese & 1/4 of a cup of sugar, so cheese is smooth. add in vanilla extract. mix.
in a separate bowl, whip heavy whipping cream until soft peaks form, so it's nice & fluffy.
fold whipping cream into cream cheese mixture.
crush graham crackers into a fine sand like texture.
for the sauce, heat a saucepan & add POM juice & sugar. stir until sugar dissolves. add 2 tablespoons of cornstarch.
finish off with 1/4 of a cup of rum & make a drink while your at it!
bring sauce to a boil & allow it to thicken.
you can put this dessert together however you want, so be creative! I like to do so in a cup or glass, layering the "crust", cheesecake & sauce on top of one another. top it off with fresh pomegranate seeds.
