what you need:
a slow cooker
manchego cheese or your favorite cheese
salt & pepper
what to do?
spray your slow cooker with a little bit of cooking spray so the eggs don't stick to the bottom and sides of the bowl.
rinse kale and tomatoes. Cut kale into small pieces & cut tomatoes in half.
mix your eggs and as much cheese as desired together (cheese is by far my favorite food, so I go a little overboard on the cheese).
add tomatoes, kale and a pinch of salt and pepper. Make sure al ingredients are well combined and pour into slow cooker.
set slow cooker to high and soon you will have a beautiful frittata! Allow about 45 minutes to an hour to cook, depending on the width and depth of your slow cooker cooking time can vary.
I find a nice chilled white wine does the trick! My new favorite white is a Matua Valley Sauvignon Blanc. AND you can find it for about $12... can't get much better than that!
