what you need:
for 2 salads
1 cup of blackberries
1 table spoon honey
salt & pepper
what to do?
Heat nonstick pan to medium with 1 tablespoon of olive oil. add blackberries. Smash blackberries as they begin to become soft. about 5 minutes. Add 1/2 tea spoon of crushed sage & 1/2 tablespoon of honey & combine. Add 2 tablespoons of balsamic vinegar.
Take off of the heat. In a separate pan, heat 1 tablespoon of oil, add asparagus & sprinkle with salt & pepper. If you pan is big enough add shrimp to pan and sprinkle with salt & pepper.
Cook asparagus for around 5 minutes. When shrimp are opaque, about 5 minutes as well (depending on thickness) take off heat.
Rinse kale. Add asparagus spears, shrimp & goat cheese crumbles. Pour blackberry sauce on salad & enjoy!
Oh how wonderful are blackberries in the summer? If you are lucky enough to pass by a blackberry stand this summer make sure to stop! Blackberries & sage blend together perfectly & my kale salad brings out the best of all the flavors. This summer salad is filled with healthy vitamins & a whole lot of flavor. Enjoy it as a first or main course.
