what you need to feed two people
for homemade pasta
(or you can buy your favorite kind of pasta)
2 1/2 cups of flour
1 tablespoon butter
1 3/4 cup half & half
1 teaspoon flour
1 teaspoon garlic powder
1/2 cup shredded manchego cheese or parmesan
1 cup frozen peas
4 pieces of prosciutto cut into smaller slices
1 cooked chicken breast cut into small bites (you can leave this out or add it, I had some in the fridge, so why not).
To make past dough, place flour on a clean countertop. Create a mound of flour with a hole in the middle (like a little volcano). Add one egg to the hole & slowly move outside flour in toward the egg. Slowly work egg into flour. Add second egg & incorporate slowly. Begin to knead dough until no longer sticky.
Use pasta maker to flatten dough & to cut dough into noodles. A pasta maker is one of my favorite kitchen tools. I never buy pasta from the store anymore!
After pasta noodles are made, add them to boiling salted water and cook like you would dried pasta from the store.
For sauce, melt 1 tablespoon of butter in a large non stick pan. Add chopped shallot. Cook until translucent or for about 3-5 minutes. Add warm half & half. Whisk in 1 teaspoon of flour to thicken (about 5 minutes). Sauce should begin to stick to whisk.
Add 1 teaspoon garlic powder. Add peas & prosciutto to sauce. Stir. Add cooked chicken. Add manchego. Stir & allow to sit for about 3 minutes. Salt & pepper to taste.
Pour on top of pasta & enjoy!
Ahhh I am finally back... After a long winter break hiatus, I enjoyed food cooked for me by my parents. Safe to say, it was hard to leave. But every college kid has to grow up (and find a job...help me) & cook for themselves! So, I am back with a new recipe that is absolutely perfect comfort food during this cold winter we are having. I love making homemade pasta as it has a flavor of its own that is so simply divine. The cream sauce with manchego, peas & prosciutto is rich & creamy & not to mention easy to make! Enjoy this meal with a full bodied Chardonnay & a friend who also needs some warm delicious food.
