This recipe blends traditional "fried rice" with unique fresh flavors like ginger & cilantro provide a burst of flavor in every bite. This fried rice dish is perfect on its own or as a side dish to your favorite meal. Super easy & can be made as a vegetarian meal, my fried forbidden rice will keep you coming back for thirds & fourths...
what you need for 4 people:
1 cup of dried Forbidden rice
2 cooked chicken breasts
2 cups of sliced shiitake mushrooms
1 head of broccoli (about a cup to two cups when cut into small pieces)
1 head of cauliflower (about a cup to two cups when cut into small pieces)
1/2 yellow onion
2 cloves of garlic
2-3 tablespoons of grated ginger
walnut oil (you can use peanut oil as well)
salt & pepper
3 tablespoons of soy sauce
2 tablespoons of rice vinegar
4 tablespoons of walnut oil
4 tablespoons of chopped cilantro (or more if you love it lime my mama does)
1/2 teaspoon sriracha (or more if you like a little kick)
1 1/2 teaspoons of sugar
1 teaspoon of pepper
what to do:
To cook rice: Add 1 cup of dried rice to 1 3/4 cups of water. Add a sprinkle of salt & cook on medium to medium high for around 30 minutes (rice should absorb the water).
After rice has cooked, heat 2 tablespoons of walnut oil in a large pan on medium heat. Add chopped onion & cook for about 3 minutes until onion is soft.
While cooking onions, cut broccoli, cauliflower & carrots into small pieces (think of your favorite Chinese place's fried rice). Chop garlic. Use cheese grater to grate zucchini into strands.
Add vegetables, garlic & mushrooms to cooked onions. Add enough walnut oil to coat vegetables & sprinkle with about a 3/4 tablespoon of salt. Cook for about 10 minutes
In the meantime, get a little zesty, my friend. Mix lovely sauce ingredients together.
After vegetables are soft (but still have a little crunch), move vegetables over to one side of the pan. Crack two eggs & scramble lightly. When eggs are cooked, mix vegetables & egg together.
Add cooked forbidden rice & your cooked chicken (or not if you are a vegetarian). Mix in sauce. Add grated ginger. Cook for about 3 minutes & serve!
