What you need to feed two (or yourself & yourself again the next day)
1 large chicken breast
1 red bell pepper
2-2.5 cups of chicken stock (make sure this is enough to cover the chicken breasts, so they cook all the way)
1 can of black beans
2 tablespoon chopped yellow onion
1 garlic clove chopped
1 table spoon cumin powder
1 cup of whole milk
1 cup cherry tomatoes (can be yellow or orange)
shredded cheese (I like the colby jack mixture)
squeeze of lime
optional tortilla chips
In a pot heat 1 tablespoon of canola oil. Add chopped onion. Cook for about 3 minutes on medium. Add chopped garlic.
Add chicken stock & chicken breast cut into large slices. Rinse & add black beans, slices of bell pepper & tomatoes. Add cumin, salt & pepper. Cook covered for about 15-20 minutes.
Remove chicken breast from the pot & shred chicken with a fork.
Add milk to soup & shredded chicken back to the pot. Add about 2 tablespoons of sliced cilantro & a squeeze of lime juice. Cook for another five minute.
Top with cheese & sliced avocado & enjoy.

This chicken tortilla soup is easily made in 30 minutes & is full of that flavor you crave.
