Some people are a little afraid of figs, but let me tell you figs are delightful little fruits! They go well with cheese & are spectacular in jam. Don't be afraid of figs or you'll be missing out!
what you need for four biscuits: 1 cup of flour 1/8 teaspoon of baking soda 1/2 tablespoon baking powder 1/2 cup of buttermilk 1/2 teaspoon salt 3 tablespoons of butter fig jam Saint Angel cheese (found at Whole Foods or specialty cheese stores) or triple cream brie | what to do: Preheat oven to 450F. Combine dry ingredients in a food processor. Pulse until combined. Cut butter into chunks & add to food professor. Pulse a few more times. Add buttermilk & pulse until combined. Remove dough from food professor gently & place on floured surface. Lightly form pat dough flat till it is about 1 inch thick. Be as gentle with the dough as possible it should be quite sticky. Spray pan with cooking spray. Cut dough into 2 inch circles & place in pan (I used a cup with flower on the edges because I did not have any cookie cutters). Bake for 10 minutes. Serve with St. Angel & fig jam & you are golden! Enjoy! |
