what you need:
yields about 12 wraps
head of boston bib lettuce
2 cups cooked quinoa
2-3 large carrots
head of purple cabbage
2 green onions
1 cup of cherry tomatoes
1 bunch of cilantro
2 cups of cooked ground beef if you want!
1/3 cup of lite soy sauce
1/3 rice vinegar
1/2 cup of olive oil
2 tablespoon honey
2 table spoon ground ginger
what to do:
Cook quinoa, remember 2 cups of water for every one cup of quinoa. Cook for about 15 minutes until fluffy.
If you have chosen to include the ground beef in your wraps, marinade in 2 tablespoons of soy sauce, 2 tablespoons of olive oil & 1 clove of chopped garlic. Mix with hands to make sure beef is covered. Cook on medium in non-stick pan for about 5-7 minutes.
Peel carrots & chop into small squares. Rinse & chop cabbage, tomatoes, cilantro & green onions.
Combine ingredients for honey ginger dressing.
To assemble your refreshing lettuce wraps, take one piece of lettuce, add 2 spoon-fulls of quinoa, add one spoon of beef if you desire, carrots, tomatoes & top with onion & cilantro.
Use honey ginger dressing as a dip or pour directly on to the wrap.
