What you need:
Makes two large burgers
1 can black beans, rinsed
1/2 can corn, rinsed
2 cups of cooked quinoa
2 whole wheat burger buns
boston bibb lettuce
halloumi cheese (can be purchased at Whole Foods)
lemon or lemon juice
salt & pepper
What to do:
Cook quinoa. 1 cup of water to one cup of quinoa. Cook until nice & fluffy, about 15-20 minutes.
Chop onion. In a nonstick pan, heat ½ tablespoon of olive oil & cook onion until translucent.
In a large bowl smash black beans. Mix in cooked quinoa, corn, egg, 1 teaspoon of cumin, cooked onions, 1 teaspoon of salt & a sprinkle of pepper. Mix well. If too sticky, add flour as needed.
Shape into patties. You're hands are gonna get messy!
Heat non-stick pan to medium with 1 tablespoon of olive oil. Carefully place patties in pan. Cook each side for about 7-9 minutes (be careful flipping them).
While patties are cooking, cut cheese into nice bite size slices. Season with olive oil, salt, pepper & a squeeze of lemon juice.
Slice avocado & smash. Add cilantro. Add sprinkle of salt, pepper, & cumin.
After you take burgers out of the pan, add halloumi cheese to pan. Cook about 1-2 minutes each side.
Build your burger! Get excited… Open your whole wheat burger bun & start stacking! Lettuce, burger, avocado mixture, halloumi cheese & tomato. Have lots of napkins cause this is one big messy, delicious burger! Enjoy…

My absolute favorite food is cheese, I could put cheese on anything & I've never met a cheese I didn't like! I was recently introduced to halloumi cheese (thank you, Raterman family in Florida). This salty cheese from Cyprus is semi hard & made most often of sheep's milk. It is delicious seasoned with lemon, olive oil, salt & pepper & eaten on crackers, fruit or on its own! I love it on this burger because the salt & texture compliments the burger perfectly! It is available at your local Whole Foods.
Start feelin' good... by eating this meatless burger you are investing in your health. Meatless burgers are low fat & low calorie in comparison to their meaty counterparts. Black beans & quinoa are full of good fiber & protein. That guacamole is full of "good fat" which reduces levels of cholesterol in your blood & avocados are also high is potassium. So say adios to that meat burger & hello to your new juicy, meatless best friend (you can thank me later).
