what you need:
for two personal pizzas
1 cup of quinoa
2 cups of shredded of italian bland shredded cheese or your favorite cheese for pizzas
*2 bell peppers
*2 cooked chicken breasts
3 table spoons of tomato paste
1 cup of cherry tomatoes
2 cloves chopped garlic
salt & pepper

what to do:
Preheat oven to 400F
In a medium pan cook 1 cup of quinoa on medium with 2 cups of water& 1 tablespoon of salt until fluffy (about 15 minutes).
In a nonstick pan, heat 2 tablespoons of olive oil on medium, add cherry tomatoes, garlic, 1 3/4 tablespoon of onion powder. Stir. Allow cherry tomatoes to burst then add tomato paste, 1 teaspoon of salt & about 3 tablespoons of chopped basil. Turn down heat to low & cook for about 15 minutes.
When quinoa is cooked pour into a bowl. Add egg & mix. Add 1/2 cup of cheese & mix ( the egg & cheese will hold the crust together). Add 1 teaspoon garlic powder. Mix. Separate quinoa "dough" into two. Spread & flatten on greased baking sheet, about 1/2inch thick.
Take tomato sauce off of heat & spread onto quinoa crust. Add desired toppings & a bit of love. I used chicken & peppers because they were in my fridge. But feel free to be creative! Top with cheese & fresh basil.
Bake for about 30 minutes. Enjoy with good company & relish in the the luxury of a gluten free "junk" food.
Who doesn't love a good pizza? This twist on the classic junk food will have you oohing & ahhing, while wondering how it can possibly be gluten free! The quinoa base is simple to make & packed with protein, iron & fiber (& and some cheese...) Feel free to get creative with toppings you love & experiment a little! I used peppers & fresh tomatoes because it's summer after all! I made an easy homemade tomato sauce (because I know what is in it...) but feel free to use pesto or canned red sauce if you wish!
