what you need:
for 12 apple bundles
1 frozen pie crust
3 granny smith apples or your favorite apple (I used combination or apples)
2 tablespoons lemon juice
4 tablespoons cinnamon
3/4 cup of sugar
flour for rolling pie crust
what to do:
thaw pie crust.
preheat oven to 400F
slice apples into small pieces
place apples in bowl and add, cinnamon, sugar and lemon juice. stir so that all apples are coated.
flour and roll pie crust thin and cut into about 3-3 1/2 inch squares
spray tin with non stick spray. place dough in muffin tin. fill dough with apples (not too full so that you can bundle them up!)
bring the 4 corners of the dough together and twist to close.
crack egg and whisk. cover bundles with a little egg, and a sprinkle of cinnamon and sugar.
bake for 12-14 minutes or until golden brown.
It is spring in the States, but I am at the end of fall here in South Africa, so I am sharing a fall dessert! Apple bundles are extremely easy to make which makes them perfect for any night of the year. Try them with a scoop of vanilla ice cream and you can't go wrong!
