What you need for 4 wonderful people:
1 Chinese eggplant
1 red pepper
1 yellow squash
1 can of artichokes
1 shallot (or your favorite onion)
about 1/4 cup chopped fresh parsley
about 1/4 cup chopped fresh basil
about 2 tablespoons of fresh oregano leaves
about 2 tablespoons of fresh thyme leaves
2 cloves of chopped garlic
1 cup quick cook grits
1 1/2 cups of graded white cheddar
Pinch of Spanish paprika
2 tablespoons of lemon juice
salt & pepper
skewers for grilling
What to do:
Cut vegetables & shallot into larges chunks so that they can be skewered. You don't really need to cut the artichokes (you want them to hold their shape so they don't fall apart on the grill)
In a bow, combine 1/3 cup of olive oil with fresh chopped herbs, chopped garlic, paprika & lemon juice Mix well.
Heat grill to medium. Coat vegetable pieces in olive oil & sprinkle with 1/2 tablespoon of salt. Skewer vegetables so that they look pretty, a few of each on the skewers.
Place vegetable skewers on grill & close grill. Let cook for about 15-20 minutes, but make sure you keep checking on them & turning skewers over if necessary (& if you like a bit of char on each side) .
In the meantime, boil 4 cups of water & add grits & about a teaspoon of salt. Whisk grits into boiling water & when thick, add graded cheese in small batches until smooth. (If you have a nice friend in the kitchen with you, ask them to continue stirring grits gently so that they stay fluffy)
Remove vegetables from the grill when charred a bit & nice & hot.
Remove grits from heat, place on a nice plate & top with your skewers. Pour your herb dressing over the skewers & serve!
