What you need:
-1 lb of halibut
-1 lb of raw shrimp
-6 limes worth of lime juice
-grape tomatoes (or whichever ones look good)
-red onion chopped (about a 1/4 of it or so unless you really love onions)
-2 cloves of garlic chopped
-salt and pepper
-tortilla chips for dippin'
What to do:
-put shrimp & halibut in a bowl with the lime juice add a pinch of salt & pepper
-cook on low until shrimp are opaque & fish is cook through (about 10 minutes)
-after cooked cover seafood & refrigerate for 30-45 minutes
-while fish cools, cut tomatoes & avocado, roughly chop the cilantro.
-after seafood has cooled cut into bite size pieces & combine all ingredients in a cute bowl, mix & salt & pepper to taste
-tada! easiest ceviche ever!
